Slow Food Retreat

Break away from your hectic world of meals in a hurry and relax in the soothing Caribbean with our week-long culinary retreat. Come experience first hand the rejuvenating effects of eating freshly harvested organic fruits and vegetables on our serene farm, nestled in the hills of St. Croix. Learn why fresh foods, properly prepared and paired, are your best medicine against sickness and an essential key to a long, happy life. Nourishment extends from the spade to the fork, as your time in the garden reacquaints you with the connection between soil, sun, water, and life; a grounding experience that might just reshape how you view three meals a day for the rest of your life.
Your week in the rainforest will feature morning lessons in the garden, late morning culinary classes in the kitchen, afternoon free time, and three outstanding farm- grown organic meals a day. The entire program will be based on the tenets of the Slow Food Movement. Founded in 1989 by Carlo Petrini, the Slow Food Movement was meant to “counteract fast food and fast life, the disappearance of local food traditions and people’s dwindling interest in the food they eat, where it comes from, how it tastes, and how our food choices affect the rest of the world.” Our farm was selected to represent the Virgin Islands Farming Community at the 2006 Terra Madre Slow Food Convention in Turin, Italy.
Our weeklong retreat will operate under the spirit of Slow Food and introduce you to our culinary and agrarian lifestyle. On your free time afternoons, yoga, hiking, snorkeling, and sightseeing will be possible pursuits of the week. Not to mention relaxing on the beach just down the hill from our valley farm. Our morning session in the garden will center on basic organic growing techniques (mulches, compost, companion planting, cover cropping, etc.) for the backyard gardener. The late morning session in the kitchen will cover subjects such as:
-basic knife skills and cooking techniques
-the art of seasoning
-how to improvise
-the role of ‘intention’
-menu planning from the seasonal garden
-medicinal herbs
...and plenty more.
The week will culminate with a five-course dinner, creatively conceived and prepared by you and the farm culinary team, comprised of local and stateside chefs and cooks who share a passion for Slow Food.
Housing $350 (guests will enjoy our solar powered cabanas, built from sustainable harvested hardwood… double occupancy)
